Vaquero Dining was a collaboration between Renew Design and Brave Creative. The client’s vision for the space was to create fine dining restaurant and cocktail bar tucked behind a butchery in Albion.

The design inspiration was taken from the Spanish cowboy known as the Vaquero. The material palette combines charred timbers, leather and rope to draw reference to this design inspiration.

At Vaquero meat is the hero of the meal. Stepping through the butchery to enter the restaurant, diners can choose their cut of meat and watch it prepared in the open kitchen before presentation at the table.
